What is Water Hyacinth All About?

Water hyacinth is a beautiful, self-propagating water plant and one of
my favorites. As you can see, it is beautiful, but it is also very
nutritious. Here at the farm we feed it to the chickens and ducks, but
in some regions of Asia, people eat it too.
It is very fibrous, so it must be boiled and then cooked, for human
consumption, but the chickens and ducks love it raw. Part of the goal in
self-sufficiency, therefore, on site self-propagating food means less I
must buy and water hyacinth packs a major amount of good nutrition. In 1
serving there is 50g of protein, 27% calcium and 59% iron! You can read
